Cowmans Butchers, Clitheroe

Cowman’s is a genuine Clitheroe institution – a traditional family butchers where an amazing selection of proper sausages are made by hand using prime cuts of meat from local farms.

It was after a 1980s TV documentary exposed some dubious practices in the meat industry that the sign went up in the window. Horrified by what he had seen, then owner Cliff Cowburn handwrote a sign declaring: “Our sausages contain no slurry, slurp or goo… just quality meat.”

“And that’s just as true today as it was 50 years ago. The quality of the ingredients is key. Legally, we could chuck in bits of bone, sinew or rind to make up the meat content, but that’s not the Cowmans way.”

Nick and colleagues still make sausages three or four days a week in the prep room at the back of the meat counter – in full view of all their customers.

“We have nothing to hide – we use prime cuts from local farms and keep the meat content at 75 per cent, because quality is what our reputation is built on.”

The range now extends to some 70 varieties, from the traditional – like plain pork or beef, to the innovative, such as merguez lamb or pork and Blacksticks Blue or the seasonal: pork, cranberry and rosemary or sunny sizzlers – perfect for the barbecue.

“Our customers understand that you get what you pay for and once they’ve tried our sausages, they’re happy to pay a bit more, because they’ve tasted the difference.”
